What to eat & drink

The organiser's 2026 new-foods teaser described that year's lineup, built around the America250 theme, as 'a delicious tribute to the creativity, diversity and indulgence that define the American fair experience, from viral sensations to all-new classics.' The full release and any 2027 equivalent were not available as readable on-site text at capture (hosted only as a SharePoint-linked PDF), so no individually named dish is reported here.

The experience

What's special

The Florida State Fair runs twelve consecutive days every February at the Florida State Fairgrounds in Tampa, a 337-acre, year-round events property the fair has called home since the Florida State Fair Authority moved operations there in the 1970s, with roots tracing back to a first fair held in 1904 at Henry B. Plant's Tampa Bay Hotel. The 2027 edition runs February 4 to 15, closing on President's Day, with gates open from eleven in the morning on non-holiday weekdays and ten in the morning on Fridays, weekends and the closing Monday, all the way to nine at night. Gate admission is published as a single price rather than separate advance and walk-up tiers: eleven dollars and seventy five cents for an adult, with a cheaper rate for children six to eleven, a senior rate, and free entry for children five and under. On two Thursdays, admission drops to three dollars at the gate. Carnival rides, run by Wade Shows across more than eighty attractions, are priced and sold entirely separately from gate admission, whether by individual ride credits or by an all-day armband, and a handful of specialty attractions such as a mechanical bull and a bungee jump cost extra again on top of any armband

What people love

The organiser names more than eighty midway rides and a running roster of new food items each year as recurring draws, with the 2026 lineup built around an America250 theme spanning what the organiser calls viral sensations and red, white and blue takes on fair classics

Last time around

The 2026 Florida State Fair had closed by the time of this capture, with the organiser's own agriculture page marking it 'in the books' and pointing ahead to the confirmed February 4 to 15, 2027 dates while vendor, entertainment and detailed programme announcements for 2027 were still pending
